Cooking seasoned pumpkin rice is quite simple yet delicious. It is another variation of rice the Jamaican way just like the rice and peas.  Pumpkin rice is not only tasty but the pumpkin adds some vital nutrients that the body could do well with. It is rich in vital antioxidants, and vitamins such as vitamin A, flovonoid poly-phenolic and carotenes in large quantity.
2lbs rice
˝ lb pumpkin cut in cubes
1 small coconut juiced for its milk or
4 tbsp of the powder or 2 oz of the canned liquid.
1 Onion
2 Stalks escallion diced
1 tsp vegetable seasoning
Salt and black pepper to taste.
Combine all ingredients in a pot.
Whichever of the coconut milk is been used,
the water must be just about an inch above the rice.
Cover and cook over medium heat.

Check every so often and as soon as the water reduces to the level of the rice set the flames to as low as possible.
Cover the rice as tight as possible.
Steam for another 25 minutes.
Depending on the type of rice been used (brown rice takes a little longer) if after 25 minutes the rice is not cook thoroughly then just sprinkle a little water over the rice and let steamed for another 10 minutes or so.
